The quest for the perfect almond
Almonds have always been at the heart of our creations. They slip into Once Upon a Christmas, they invite themselves into Tout Contre Toi, they illuminate Pomme d'Orange… And yet, for a long time, they had no dedicated setting, no place to reign alone in majesty.
It took a request, a whispered wish from a loyal customer whose apartment overlooked our boutique on Boulevard Malesherbes. A rare request called for an exceptional quest.
So we hit the road, searching for the perfect almond. Far from distant lands, we wanted a European origin, a terroir with sincere accents. Spain, Portugal, Italy… so many promises glimpsed, before Corsica, the leading almond producer in France, came to captivate our hearts. In the orchards of Balagne, between sea and mountains, almonds flourish in a generous climate. It is there, under these changing skies, that we found our jewel.
All that remained was to honor it, to offer it a fitting setting. In the secrecy of the workshop, the flavorist sought balance, the perfect note where almond and black tea would blend in a subtle dance. The tannic power of the tea, the suave tenderness of the almond: in the cup, an alchemy is revealed, round and silky, caressing the palate like a precious fabric. Our Almond black tea was born.
Tea and food pairings
Almond black tea reveals its full richness when paired with sweet treats with melting textures and subtle aromas. It pairs perfectly with a slice of financier cake, vanilla cream, or poached pear with dried fruit. A thin frangipane galette, a sweet olive oil madeleine, or even a piece of tender nougat enhance its muted personality. Each pairing enriches the dialogue between the velvety black tea and the discreet nobility of almond, for a truly refined tasting experience.
Recipes and cocktails using Almond black tea
In its iced version, Almond black tea is surprisingly indulgent. Cold brewed, then lightly sweetened and topped with almond milk or whole milk, it becomes a smooth and thirst-quenching beverage, ideal for a refined afternoon snack. For a more daring creation, pair it with Amaretto liqueur, a hint of orgeat syrup, and a dash of lightly whipped cream. Served over crushed ice in a low glass, this cocktail evokes the aromas of fine pastries and autumn evenings in a cozy home.
