- Blend of black teas of Yunnan, Darjeeling and Assam -

This blend of black teas gives a powerful and flavourful cup that is perfect at tea-time, with or without milk.

The Winter Blend is one of Betjeman & Barton's emblematic creations. It was created in the early 1980s, at a time when the House was exploring new avenues in the art of blending. The idea was seemingly simple: to create a black winter tea that was comforting, structured, and balanced. But its design proved to be unique, as it was based on a rarely attempted audacity: integrating a Yunnan into a blend.

Traditionally, blended black teas combine Assam for power and body, and Ceylon or Darjeeling for finesse and aromatic clarity. Yunnan, from the high mountains of southwest China, belongs more to the world of single-origin teas: it is enjoyed pure, so strong is its aromatic personality. Its woody, honeyed notes and round texture make it a complete, almost meditative tea.

It is precisely this singularity that inspired the creation of the Winter Blend. The idea was to bring together three great terroirs, three complementary characters:
• Yunnan, for its velvety warmth and aromatic depth;
• Assam, for its malty richness and structuring vigor;
• Darjeeling, for its floral and luminous touch that balances the whole.

The result is a black tea of great harmony, both rich and precise, designed to accompany the coldest months of the year.

The choice to make it a winter blend is not insignificant. Black teas are naturally more appreciated during the cold season: their denser infusion, their richness in tannins, and their warmer aromatic profile provide an immediate sensation of comfort. Where green and white teas evoke freshness, black teas offer a gustatory warmth and an enveloping structure that respond to the physiological and sensory needs of the winter period.
Theine also helps maintain energy and alertness when the light fades. It is a vitalizing and comforting drink, ideal for cool mornings or quiet late afternoons, when one seeks to warm up without feeling heavy.

In this logic, the Winter Blend holds a special place. Its Yunnan softens the power of Assam, while giving body to Darjeeling. The whole unfolds an amber, silky, and persistent liquor, marked by notes of malt, dry wood, and brown honey.

This blend perfectly illustrates the philosophy of Betjeman & Barton: respecting traditions while allowing for innovation. By integrating a great Chinese tea into a winter composition, the House has signed a rare and balanced blend, capable of warming without dominating, of awakening without abruptness, an ideal companion for the cold season, between a wood fire and golden light.

Tea and Food Pairings
Winter Blend, composed of Yunnan, Darjeeling, and Assam teas, unfolds its full potential when paired with the aromatic generosity of French roasted duck. The malty power of Assam marries the dense, flavorful flesh of a honey-glazed duck breast, while the honeyed and slightly chocolatey notes of Yunnan extend the caramelization of the skin, adding a sweet and smoky depth. Darjeeling, with its floral delicacy and hint of astringency, balances the richness of the fat, offering a bright counterpoint to a reduced sauce with mild spices and red wine.
Served plain to preserve its aromatic tension, Winter Blend coats the palate between each bite and enhances the dish's texture. In a bolder pairing, it also accompanies duck with roasted figs, magnifying the candied fruit through a subtle interplay of freshness, warmth, and elegance: a true gourmet culinary pairing where tea becomes a high-precision partner.

Recipe using Winter Blend Black Tea
To enhance a red fruit coulis, generously infuse Winter Blend in boiling water until you obtain a rich and fragrant liquor. While still warm, pour over fresh blackberries and raspberries with brown sugar and raw Scottish honey. Simmer gently; the fruits will melt and release their crimson juices. Add a squeeze of fresh lemon, a pinch of sea salt. Blend this dark and velvety symphony: the power of the tea embraces the generous astringency of the fruits. The coulis turns ruby-purple, gleaming with brilliance. Pour generously over crème anglaise, pavlova, or vanilla ice cream... a gourmet winter in a spoon.
