Tailor-made, the soul of our House
The story of this tea begins with one of our most loyal customers, a familiar figure in our boutique on Boulevard Malesherbes. She has always had a discreet but strong passion for two sweet treats that she herself describes as her "guilty pleasures": caramel, round and comforting, and vanilla. A loyal fan of our caramel tea, she had long been telling us about a more specific wish: a blend where the generosity of caramel would be enhanced with a subtle touch of vanilla, to perfectly complement her favorite dessert: millefeuille, whose caramelized puff pastry crackles gently under the spoon. Convinced that her gourmet instinct would echo that of many connoisseurs, we brought this elegant black tea to life, both indulgent and delicate. And, as a crowning touch of refinement, we even had the pleasure of delivering it directly to the tea room of her favorite palace.
A two-voice ritual
Every Saturday afternoon for years, she has crossed the 8th arrondissement to sit down, at the appointed hour, in this cozy haven with high glass roofs, hidden behind the facades of a grand Parisian hotel. Between the bouquets of immaculate lilies, the ivory velvet armchairs and the monogrammed cutlery, she perpetuates a sweet and immutable ritual with her granddaughter. Her pleasure has never changed: the caramelized millefeuille of this young pastry chef whom she saw starting out... This classic dessert, both crisp and melting, finds a natural echo in our Les Classiques tea, whose sweetness it prolongs and underlines the richness. Her granddaughter, however, prefers a more contemporary pleasure: a choux pastry filled with a light cream, topped with a glossy icing. Two generations, two sweets, but the same taste for subtle combinations.

Les Classiques trouve tout naturellement sa place aux côtés des douceurs pâtissières aux textures moelleuses et fondantes. Il accompagne à merveille un millefeuille croustillant, une crème vanille légère, un gâteau de semoule caramélisé ou encore un riz au lait à l’ancienne. Les desserts aux fruits secs, noix de pécan, noisettes, amandes, révèlent aussi ses notes beurrées et soyeuses.
Au petit déjeuner, il sublime une brioche encore tiède, un pain perdu à la cassonade ou une tarte fine aux pommes caramélisées. À l’heure du goûter, il s’invite sans prétention mais avec panache, auprès d’une madeleine, d’un biscuit sablé ou d’une galette au beurre demi-sel. L’accord se joue alors sur la continuité de la tendresse, entre fondant, vanille et éclats sucrés.
Recettes et cocktails à base de thé
Infusé à froid, Les Classiques devient une boisson douce et soyeuse, parfaite pour les après-midi d’été ou les fins de repas d’hiver. Laissez infuser 2 grammes de thé dans 250 ml d’eau filtrée à température ambiante pendant 4 à 6 heures. Ajoutez une pointe de lait d’avoine ou une larme de crème vanillée, pour une version “dessert à boire” à la fois régressive et raffinée.
En version cocktail, réalisez un sirop de thé noir Les Classiques (infusion concentrée sucrée), puis mélangez-le à un rhum brun doux, quelques gouttes d’extrait de vanille naturelle, et un trait de bitter caramel. Secouez avec des glaçons, servez dans un verre bas avec un zeste d’orange légèrement flambé pour une touche d’âme ancienne. Un cocktail chaud-froid, gourmand et surprenant.
