It is well-known how Earl Edward Grey, the British Foreign Secretary, created this blend, drawing his inspiration from ancient Chinese traditions. Still in fashion and known worldwide, the Earl Grey tea deserves yet to be prepared with the utmost care. It needs an excellent tea from China and the exquisite bergamot from Calabria. A delicious English great classic.
An inherited and reinvented Earl Grey
Archibald "Archie" Ashford is the youngest of the family. He lives in England, in the Cotswolds, in the country house inherited from his grandparents. While he shares with his father George a deep love of Earl Grey tea, he adds his own signature: a commitment to organic tea, a quest for naturalness, and above all, a great passion for citrus fruits.
For several years, Archie has devoted his energy to a singular project: the creation of a conservatory of ancient and forgotten citrus trees, housed in the property's former greenhouses. With a green thumb and a curious mind, he cultivates bumpy citrons, hardy bergamots, broad-leaved bitter oranges, and even small Kashmir limes. Each tree is a fragment of history, each bloom a wonder.
Our Organic Earl Grey (which he loves so much that he orders it from our Parisian boutique) speaks a language he understands: a certified organic black tea, structured, deep, on which a vibrant bergamot unfolds, also from a clean, respectful cultivation. A tea in his image: understated, committed, luminous.
Tea and food pairing
Organic Earl Grey pairs wonderfully with simple, vibrant flavors: sourdough rye bread with organic churned butter, toast with heather honey, or oatcakes with ancient grains. It also works wonders with forgotten fruits: blue plums, Reinette apples, or homemade quince jam. Its zesty notes enhance the softness of a pear clafoutis, balance the sweetness of an apple compote, and add a touch of flair to a brown sugar crêpe.
Recipes and cocktails using organic Earl Grey tea
Archie often cold-brews his organic Earl Grey in chilled spring water with a few lemon balm leaves and a zest of homemade bergamot. Sometimes he makes a syrup, which he mixes with wild apple compote or farm-fresh yogurt. In the summer, he makes a granita with a touch of honey and lemon thyme, to be served at the end of a meal, to gently prolong the evenings.
