Chung Hao Jasmine and Williams Pear Granita

For 4 people:

Ingredients :

  • 40 cl of concentrated Chung Hao Jasmine infusion
  • 80 g of blond cane sugar
  • 2 ripe Williams pears
  • 1 tablespoon lemon juice

Preparation :

  1. Infuse the tea for 5 minutes in water at 80°C to obtain a fragrance
    intense.
  2. Mix the hot infusion with the sugar, stir until dissolved. Add the
    lemon juice.
  3. Blend the peeled pears into a smooth purée and add to the sweetened infusion.
  4. Pour into a shallow dish, place in the freezer, scrape with a fork
    every 30 minutes until you get fine crystals.
  5. Serve in small glasses, decorated with dried jasmine petals.
