An exceptional composition

Christmas teas made with green tea are rare, requiring finesse, balance, and expertise. It's important to respect the delicacy of Sencha while infusing the deep, warm aromas of winter. Once Upon a Time in Christmas elegantly meets this challenge. It's the only Christmas creation in our collection made with green tea: a daring and precious little gem that demonstrates the unique talent of our flavorists. Successfully blending the crystalline freshness of tea with the complexity of spices without betraying their character is precisely the subtle art that is Betjeman & Barton's signature.

Two interpretations, one spirit

If the black version of Once Upon a Christmas evokes the golden shadow of a slowly simmering pudding, the velvets of an English living room, the scent of a rich, candied dessert, the green version takes us elsewhere. It opens a kitchen to the morning, a frosty garden, a still-warm apple on a wooden board, a cinnamon stick forgotten on a white cloth. Less enveloping, but just as evocative, this infusion tells the story of Christmas differently, clearer, more vivid, but faithful to the emotion.

Tea and food pairing

This Christmas green tea, both fresh and spicy, pairs perfectly with simple yet aromatic sweets. It reveals its finesse alongside soft gingerbread, apple cake, or rice pudding infused with sweet spices. Iced, it pairs well with a slightly lemony apple-pear compote or a winter fruit sorbet. It can also be used directly as an infusion in a cream or paste to subtly flavor homemade desserts.

Once Upon a Christmas Tea Recipes and Cocktails

To prolong the magic of Christmas until the last bite, we imagine for dessert: a melting and frosted Christmas iced nougat, in which the cream has been infused for a long time with our Christmas green tea. Even before the egg whites are whipped and the dried fruits crunch under the tooth, the Sencha leaves have left their aromas: juicy apple, delicate cinnamon, powdered vanilla, and a hint of spice. This fragrant base then blends with warmed honey, whipped cream, almond and pistachio slivers, and diced apple compote... Served in slices on a plate dusted with icing sugar, this iced nougat becomes a tale in its own right; a winter tale where tea still whispers, between the milky sweetness and the crunch of a memory.
