This herbal tea comes from the Rooibush, a thorny shrub with thin stalks and yellow flowers, that grows wild in the Cederberg region in South Africa.

The taste of this green rooibush is a little more bitter than red rooibush. This one is not a fermented tea since leaves have only been dried out.

A Preserved Rarity

Green rooibos is still not widely known in Europe. Long kept confidential, it is cultivated in small quantities by farms that have preserved patient expertise, passed down outside industrial channels. It was during a prospecting trip that our team discovered, in an isolated valley of the Pakhuisberg, a family cooperative that cultivated this rooibos with the utmost respect for the plant. Dried without fermentation, its needles retain their light color, freshness, and a rare aromatic richness.

A Counter-Current Rooibos

In contrast to the powerful and woody red rooibos, green rooibos appeals to palates seeking subtlety. Less pronounced but more complex, it captivates with its purity, delicate tension, and its ability to infuse without ever becoming overwhelming. It is an infusion for connoisseurs, revealing itself with each sip, and whose apparent simplicity hides a true sophistication.

Rooibos and Food Pairings

Green Rooibos pairs wonderfully with light, plant-based, or low-sugar cuisine. It delicately accompanies steamed vegetables, a fennel and green apple salad, or white fish tartare. For sweet dishes, it goes well with subtle desserts such as rhubarb compote or verbena jelly. It can also be used to make a translucent jelly, simply infused with a little verbena or lemon, to accompany a white fruit salad: pear, grape, peach.

Recipes and Cocktails with Green Rooibos

For a refreshing and bright drink, infuse the green rooibos, then let it cool gently to room temperature. Once filtered, add a few thin slices of cucumber, lime zest, and a few lemon basil leaves. A touch of agave syrup will sweeten the mixture without masking its freshness. After chilling, the infusion becomes a revitalizing botanical water, both smooth and thirst-quenching, ideal for sipping in the sun or serving in a tall, clear glass to extend a peaceful moment.
