The Memory of Mists
In the Ashford family, every cup tells a story. That of Earl Grey White carries the soft, erudite voice of Aunt Elsbeth, the American aunt, who lived in China for thirty years. There, she discovered white tea, its subtle nuances, its infusions as clear as silk. But her British origins were never far away, and the call of bergamot, that aristocratic scent of English tea, never left her.
A taste rediscovered
Passing through Paris, Elsbeth met up with her family on the Right Bank, the Ashfords, loyal to our house for several generations. It was in our shop on Boulevard Malesherbes that they introduced her to this very unique version of Earl Grey, made with white tea. It was a revelation. She found the light of China and the elegance of the English ritual, united in the same cup. Thus was born her favorite tea, the one she shared with those who knew how to take the time. An Earl Grey full of lightness, like her conversation: fluid, precise and subtle.
Elegance that can be felt
Aunt Elsbeth often said that “white tea never speaks loudly, but it says the essential.” Without tannins, with a great smoothness on the palate, white tea is one of the most delicate teas to harvest and to taste. It never attacks, does not saturate the palate: it moisturizes, it refreshes, it soothes. This natural purity, this grace without ostentation, is what fascinated Elsbeth. In this White Earl Grey, she found everything she loved: a subtle balance, a soft light, and a discreet, almost meditative elegance.
Tea and food pairing
White Earl Grey enhances fresh, floral sweets: sugar tart, cardamom-infused rice pudding, plain shortbread, vanilla panna cotta. It also pairs well with subtle savory dishes, such as fennel and orange salad, or scallop carpaccio with yuzu zest.At breakfast time, it shines with its lightness: toasted bread with salted butter, warm brioche, white fruits or homemade compote.
Recipes and cocktails using Earl Grey White tea
It is in its chilled version that our Earl Grey Blanc reveals all its hidden grace. Thanks to its natural delicacy, it transforms into a subtle and luminous liqueur.
In a cocktail, it flourishes in a delicate alliance: a lemony vodka, a veil of white sugar, a zest of fresh bergamot. The result? AWhite Earl, a spring aperitif to be served in a frosted glass, in homage to Aunt Elsbeth.
