Betjeman & Barton, the extraordinary tea merchants, have teamed up with Enzo & Lily to create an ephemeral collection of artisanal tea-infused ice creams and sorbets, offering a new taste experience to be savored from mid-May. A limited edition of exceptional ice creams and sorbets, imagined by Lionel Chauvin, master ice cream maker and creator of the Enzo & Lily brand, which elevates the complex aromatics of Betjeman & Barton teas in recipes that are as bold as they are elegant.

Chilled and refined: a unique collection of ice creams and sorbets

With the arrival of warmer weather, the tea expert invites guests to gather around ice creams and sorbets, offering a new way to enjoy tea: in a chilled version, creamy and intensely fragrant. This New Tea Moment promises a unique sensory experience.

By infusing the finest teas and herbal teas into artisanal ice cream, Betjeman & Barton breaks the mold and transforms the frozen treat into an exceptional ritual. This unique collection highlights subtle and refined flavors, playing on hot and cold, boldness and indulgence.

The ice creams are made with milk, cream, egg yolks, sugar, and tea, carefully infused to reveal every nuance. The sorbets rely on simplicity: fruit, sugar, water, lemon juice, and tea. A clean composition for striking freshness and unparalleled aromatic intensity.

Lionel Chauvin places primary importance on the selection of his raw materials. Each ingredient undergoes in-depth sourcing, with the artisan ice cream maker learning to know the producers personally to ensure their working methods meet his quality requirements. This approach guarantees ice creams made from real ingredients, without additives or colorings, reflecting an ethical, seasonal, and thoughtful approach to production and consumption.

Craftsmanship and passion: Lionel Chauvin, the "mathematics of ice cream"

Son of the Berthillon house, Lionel Chauvin grew up in the demanding and refined world of artisanal ice cream. Now at the helm of his own house, Enzo & Lily, he perpetuates this tradition of excellence while infusing it with a resolutely contemporary vision. A master in the art of textures, temperatures, and balance, he conceives his creations as a true "mathematics of ice cream," where every ingredient is respected for its specific characteristics to reveal the best of its nature.

The meeting between Betjeman & Barton and Lionel Chauvin was a natural fit. Two passionate houses, two family legacies nourished by boldness, transmission, and a quest for excellence. Over the course of their collaboration, a human and creative bond was born, driven by the same love for precision, noble materials, and the right touch.

Together, they dreamed of a new sensory territory, where tea becomes dessert, and ice cream becomes a moment for contemplation.

From this rare collaboration was born a collection that combines the aromatic subtlety of Betjeman & Barton teas with the technical and poetic mastery of Lionel Chauvin, to offer gourmets an unprecedented journey at the crossroads of hot and cold, tea and frozen indulgence.

This connection has continued since: in 2026, Lionel Chauvin’s black sesame ice cream became one of the two ingredients in the Matchaffogato, served at the Tea Bar in the 11th arrondissement of Paris.

The 8 flavors of the collection

Eden Rose - ice cream

Combines Chinese and Ceylon teas with delicate notes of lavender, bergamot, vanilla, and rose. A floral and elegant ice cream, like a summer stroll through the heart of a rose garden.

Pouchkine Noir - sorbet

A deep and intense sorbet, blending a Chinese black tea with notes of citrus and bergamot. Refreshing, invigorating, and subtly fragrant.

Autumn Blend - ice cream & sorbet

This blend evokes the first chill of autumn: a black tea with touches of fig, quince, grape, and dried fruit.

Si Nancy m'était conté - sorbet

A nod to Lorraine and its delicacies. This sorbet reveals notes of Mirabelle plum, bergamot, and poppy on a green tea base. Deliciously fruity and floral.

Chaï - ice cream

A full-bodied and enveloping ice cream with warm spices and black tea. Cinnamon, ginger, cardamom, and clove blend into a creamy texture.

Violette - ice cream

A subtle and delicate ice cream where violet flowers mingle with a light black tea. A scent of yesteryear, balancing elegance and nostalgia.

Jasmin Chung Hao - ice cream

At the head of the Enzo & Lily brand, created in 2021, is Lionel Chauvin. After several years spent churning ice cream for his grandfather, the great and unique Raymond Berthillon, and his father Bernard Chauvin, he launched his own brand and, above all, his own unique and original recipes "his way."
